Cantonese people eat the parts of Pigs very clearly, and different parts have different prices. The front hooves of a pig are called pig's trotters , and the back hooves are called pig's trotters. Pig's trotters are more sinewy than pig hamstrings, with moderately soft and hard tendons and a better taste, so pig's trotters are also more expensive. Pig's feet are for the poor.

1. The pig's trotters are not cooked yet. Stew the pig's trotters first. Front hooves are best. The hind hooves are also good. First, break apart the pig's trotters and chop them into pieces. When chopping pig's trotters, try to chop them with a knife so that no bone residue is left behind.
2. Prepare a few abalones. If abalone is hard to buy, Chicken drumsticks are just as delicious. Use a small spoon to scoop out the meat. The green part inside is the internal organs. Take them out. The mouth should also be cut off.
3. Clean the processed abalone and use a brush to clean all the black edges on it. Then change the knife and cut the abalone into square shapes. It is easy to taste and the dish looks good.
4. Boil the water in the pot and add the sliced green onions and ginger. Pour cold water into the pig's trotters, pour in cooking wine to remove the fishy smell, bring to a boil over high heat and remove the foam from the pot. Cook for about 2 minutes, add abalone, and cook for a while to remove the fishy smell. 20 seconds will do. Take out and wash the blood foam on it with clean water, and keep the water for later use.
5. Cut the green onion into sections, slice the ginger, prepare a small handful of garlic, flatten it and set aside.
6. Next, let’s boil some sugar. Add base oil to the pot, put a handful of rock sugar, and break it up with a spoon. Stir constantly until the sugar sauce turns into a maroon color.
7. Pour in the onion, ginger, garlic and pig's trotters, stir-fry until the pig's trotters are colored, then add abalone and stir-fry evenly. Add an appropriate amount of water along the edge of the pot, the amount of water should be equal to the amount of pig's trotters.
8. Add oyster sauce, chicken juice, abalone juice, light soy sauce, and cooking wine, and stir-fry until the seasonings dissolve. Bring to a boil, then turn to low heat and simmer for 40 minutes. Pig's trotters must be stewed over low heat so that they won't rot over high heat.
9. After stewing the pig's trotters for 30 minutes, boil water in another pot, put the noodles in the water, add a little salt, and add a few slices of Chinese cabbage to make the noodles more delicious. Sprinkle a little coriander to enhance the flavor while the noodles are cooking. After the noodles are cooked, put them into a bowl, add a little noodle soup, and pour it on the noodles after simmering.
10. After 40 minutes of stewing, the soup is very rich and fragrant, and the pig's trotters are red and soft. At this time, add a little chicken powder, sugar, pepper, and MSG to enhance the flavor. Turn the pot evenly and take it out.
