My favorite dish is still the roasted Chicken with potatoes. It is a classic taste in my memory. There are many ways to make it. What I am sharing today is the basic way. It does not require too many seasonings and ingredients. The taste is the most original deliciousness.
Materials
- Chicken wing root 500g
- Two slices of ginger
- More water
- A little cooking wine
- A spoonful of light soy sauce

- 3 potatoes
- 50g carrots
- 50g yellow onion
- 50g large red pepper
- 50g marinade
- 3 dried chili peppers

Steps
1. Crush the garlic and cut it in half. Slice the dried chili pepper and ginger. Prepare an appropriate amount of Sichuan peppercorns and set aside.
2. Cut carrots into small pieces with a hob, cut onions and red peppers into small pieces and set aside.
3. Cut the potatoes into small pieces, put them in water to prevent oxidation and set them aside.
4. Wash the Chicken wings with water, drain the water, run a knife over the surface, add cooking wine marinade and ginger slices and marinate for more than half an hour. If possible, marinate the chicken wings one night in advance to taste better.
5. Heat the oil in the pot over low heat, add the chopped spices and stir-fry until fragrant, about half a minute.
6. Then add the chicken wing roots and fry until both sides are golden brown. You can put aside the previously stir-fried ingredients without scooping them up. If you don’t like to eat Sichuan pepper, you can omit it.
7. After the wing roots are fried, add the cut side vegetables and stir-fry for about a minute.
8. Finally, add the potatoes and stir-fry over medium heat for about a minute. Add salt, light soy sauce, and pepper.
9. Finally add a bowl of water, turn up the heat and simmer for about three minutes. When the water is almost dry, stir-fry for a while and then turn off the heat and put it on the plate.
10. The potato-roasted chicken is ready. It tastes very fragrant when it is cooked. This version of potato-roasted chicken is a less oily version and will not be greasy. The meat at the base of the wings is also very tender and does not use firewood.
