3. Adding orange peel when cooking can not only effectively remove the fishy smell, but also absorb greasiness and increase the fragrance of oranges~

5. The principle of adding side dishes is: those that are resistant to cooking are cooked together with the mutton, and those that are not resistant to cooking are added according to the ingredients. Detailed methods
1. Cut the mutton into small pieces and soak in water for 2 hours. (It is best to change the water 2-3 times in the middle) The initial stage of blood removal~
2. Prepare seasonings

3. Put the soaked mutton into the pot, add water and start blanching. Use a spoon to remove foam.
4. Take out the mutton, wash away the blood and foam, and take a cold bath. (Put it in cold water to cool down for 5 minutes, changing the water once in the middle)
The cooled mutton is drained and the makeup is started, and the rouge and gouache is served (marinated). Add pepper powder, thirteen-spice salt, chicken essence, sugar, light soy sauce, and dark soy sauce. Mix the seasonings with your hands and marinate evenly. The longer, the better.
